Funny you ask, I just created one last night which is pretty tasty and loaded with fiber and protein.
1/2c Rolled Oats (blended in a food processor)
1/4 c Chocolate Cake Mix
3 scoops Chocolate Nutrimeal
2 Scoops Soy Max Protein Powder
2tbs Peanut Butter
1/4 c Applesauce
1 Tbs Cocoa Powder
3Tbs Psyllium Fiber (blitz in a Blender to break down more)
1/4 c Water
Combine all ingredients, mix well, spray a 9″ square pan with pan coating (Pam) press into all sides and make uniform. Bake at score into 8 rectangles 325 degrees for 15 minutes. Pop out and cool. 135 calories 3g fat, 7g protein, 4g fiber.
For a chewier recipe try adding prunes, pulverised raisins or unsweetened coconut.
I am allergic to Coconut, will try to find another fruit to use in this one. Also for any readers, If you need the soyamax powder or nutrimeal powder I am Usana Distributor and can help you with that!
Choc-Rice Protein Bars
5-6 scoops Chocolate Nutrimeal
1/2 cup honey and 1/2 cup dark brown suag
1 cup penaut buter + 1 Tsp water (maybe more)
1 1/2 cups rolled oats-quick ones! (I have even blended these on occasion)
2 cups rice Krispies (organic brown rice is great)
1 small serving baby prunes for moistness
Vanilla/almond flavoring if you want
1/4 c ea Chopped nuts (sunflower, pumpkin or whatever you like…)
Mix in blender. Press into PAM sprayed pan. Cut and refrig to firm them up.
OK to pack without refrig for lunch or trips.

I will try making these Sunday exchanging the prunes for something else. Not sure i can find brown rice krispies here but will see what i can substitute for those as well!! If anyone needs to order the nutrimeal powder its from USANA and I am a distributor!
